A Saba Supper
Saba, or Mackerel, is one of my all-time favorite fish. It’s loaded with Omega 3’s and is a very fishy fish. I get mine at my favorite Asian market in Portland.
Here’s how I prepare it:
First, remove the head and tail, and then gut it. It is messy work, but not too difficult.
Then place it in a walled pan lined with tin foil and sprinkle with sea salt. It is important that the pan has four walls because there is a lot of oil to this fish and it get pretty messy.
Bake at 350° for about 40 minutes to 1 hour depending on your oven.
I like to eat mine with a little soy sauce and rice. It’s a great light meal and my son loves it *happy dance*.
